Coffee Cake

Oh Coffee Cake…. why do you have to be so delicious? This is one of those recipes that brings me back to my childhood. My family would eat it almost every Sunday morning. We always loved it when the brown sugar topping would sink into the batter. It was literally a fight to get the piece that had the biggest topping sink hole.

One morning a few years ago, I was really wanting some coffee cake. Unfortunately I didn’t have any bisquick on hand (that’s how we always made it growing up). However, I realized I had all the ingredients I needed—flour, sugar, brown sugar, cinnamon, and more. After a quick recipe search and a little experimenting, this delicious recipe is now a family favorite.

What you need:

  • Mixing Bowl
  • 8×8 Pan
  • Flour
  • Sugar
  • Salt
  • Baking Powder
  • Brown Sugar
  • Cinnamon
  • Vanilla
  • Milk
  • Eggs
  • Oil

Let’s Get Started:

First Preheat the oven to 350 degrees. Then combine all of the wet ingridents together in the mixing bowl. Egg, Oil, Vanilla, and Milk. set aside.

Next, in a small mixing bowl, combine the dry ingredients. Flour, sugar (Optional), salt, and baking powder.

Once you have the dry ingredients mixed pour into the wet ingredients. and mix until combined. Don’t worry the batter will be thick.

once all the ingredients are combined set the batter aside, and lets work on the brown sugar topping. Use the same bowl that you used for the dry ingredients. Now put the brown sugar and cinnamon in the bowl and mix well. Melt the butter and set aside.

Grease your 8×8 pan. once you have the pan greased. take about half of the batter and spread it on the bottom of your greased pan. Once you have the batter in the pan. spread half of the brown sugar mixture on top of the batter in the pan. Then use the remaining batter and place it on top of the brown sugar mixture, and then spread the remaining brown sugar mixture on top.

Last but certainly not least. pour the melted butter on top. and place it in the oven to bake for 30 min. Once the coffee cake is done check it with a toothpick making sure it comes out clean. Let cool for about 5 Min. Enjoy!

Ingredients 

  • 1 Egg
  • 1 tsp Vanilla
  • 1/4 Cup Oil
  • 1/2 Cup Milk
  • 1 1/2 Cups All Purpose Flour
  • 1/4 Cup Sugar
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 Cup Brown Sugar
  • 1 tsp Cinnamon
  • 2 Tbsp Butter Melted

Instructions

  1. Preheat the oven to 350 degrees
  2. In a medium size mixing bowl combine all of the wet ingredients. Egg, Vanilla, Oil, Milk. Set aside
  3. In a small bowl combine all of the dry ingredients. Flour, Sugar, Salt, Baking Powder.
  4. Pour the dry ingredients into the medium mixing bowl with the wet ingredients mix until combined (Batter will be thick) Set aside
  5. In the small bowl that held the dry Ingredients. combine the Brown Sugar and Cinnamon. Set Aside. Melt the butter and set aside.
  6. Grease the 8×8 pan. Once the pan is Greased take half of the batter and spread it around the pan. Take half of the Brown Sugar mixture and spread it on top of the batter in the pan.
  7. Take the remaining batter and spread it on top of the brown sugar mixture in the pan. Spread the reaming brown sugar mixture on top. Once you have all the layers complete, pour the melted butter on top of the coffee cake.
  8. Place in the oven, and bake for 30 – 40 mins. Check that the coffee cake is done by placing a toothpick in the center, pull it out. make sure the toothpick comes out clean.
  9. Let the coffee cake cool for 5 mins then cut and dish out onto a plate. Enjoy!
