In a medium size mixing bowl combine all of the wet ingredients. Egg, Vanilla, Oil, Milk. Set aside
In a small bowl combine all of the dry ingredients. Flour, Sugar, Salt, Baking Powder.
Pour the dry ingredients into the medium mixing bowl with the wet ingredients mix until combined (Batter will be thick) Set aside
In the small bowl that held the dry Ingredients. combine the Brown Sugar and Cinnamon. Set Aside. Melt the butter and set aside.
Grease the 8x8 pan. Once the pan is Greased take half of the batter and spread it around the pan. Take half of the Brown Sugar mixture and spread it on top of the batter in the pan.
Take the remaining batter and spread it on top of the brown sugar mixture in the pan. Spread the reaming brown sugar mixture on top. Once you have all the layers complete, pour the melted butter on top of the coffee cake.
Place in the oven, and bake for 30 - 40 mins. Check that the coffee cake is done by placing a toothpick in the center, pull it out. make sure the toothpick comes out clean.
Let the coffee cake cool for 5 mins then cut and dish out onto a plate. Enjoy!
