Black Bean Burritos

Now this is a family favorite. Not only is it delicious, but it comes together quickly in 30 mins or less. It’s full of flavorful black beans, fresh tomatoes, lettuce, cheese, avocado (if you like them), and ketchup or my personal favorite homemade salsa. All rolled up in your favorite tortilla.

This is a simple yet delicious meal, and one that my kids very much approve of.

What you’ll need for this recipe:

  • Food Processor: I like to use my Ninja Chopper
  • Salad Spinner: Optional
  • Black Beans
  • Chili Powder
  • Cumin
  • Water
  • Tortillas: I like the to use the Tortilla Land ready to cook tortillas.
  • Lettuce
  • Tomatoes
  • Avocado
  • Cheddar Cheese
  • Ketchup
  • Salsa

Instructions: Bean Spread

  1. Open and drain your can of black beans
  2. Place beans into your food processor
  3. Add chili powder, cumin, and about 1 tsp. of water.
  4. Blend the beans. If you find that your beans are too thick, add a small amount of water at a time about 1 tsp. Until the beans are spreadable, but not runny.
  5. Set the beans aside.

Instructions: Toppings

  1. Wash and chop your head of lettuce. Give it a good spin in the salad spinner if using.
  2. Dice the tomato
  3. Shred the cheese (if not using pre-shredded)
  4. Slice the avocado (if using)
  5. Set aside

Instructions: Tortillas

Use your favorite tortillas. My personal favorite are the Tortilla Land ready to cook tortillas. You can find them in the refrigerated section at the grocery store usually by the cheese.

  1. Heat your non-stick skillet or pan
  2. Place tortilla on skillet or pan and cook until golden on one side.
  3. Flip tortilla and cook until golden.
  4. Remove from heat.
  5. Repeat until desired amount of tortillas are cooked.

Instructions: Assembly

  1. Take a tortilla and place it on a plate.
  2. Spread desired amount of beans on the tortilla
  3. Add your favorite toppings: tomato, lettuce, cheese, avocado, ketchup, or salsa.
  4. Roll into a burrito
  5. Enjoy every delicious bite!

Ingredients 

  • 1 14.5 Oz Can Black Beans
  • 1 tsp. Chili Powder
  • 1 tsp. Cumin
  • 1 tsp. Water Add more if needed
  • 1 Head Romaine Lettuce
  • 1 Medium Tomato
  • 1 cup Cheddar Cheese
  • 1 Medium Avocado
  • Ketchup or Salsa

Instructions

  1. Open can of black beans drain and pour into ninja chopper or food processor.
  2. Next add chili powder and cumin and blend together. If beans are too thick slowly add in water and mix until beans are spreadable but not runny, set aside.
  3. Now prep your toppings, wash and chop the lettuce. Give it a good spin in the salad spinner if desired. Chop the tomatoes, and shred the cheese (If not using pre-shredded.) Dice up the avocado, and set aside.
  4. Cook desired amount of tortillas if needed. Now that everything is prepped, assemble the burrito.
  5. Spread desired amount of bean spread on the tortilla, top with tomatoes, lettuce, cheese, and avocado (or any other toppings you desire). Put desired amount of ketchup or salsa on burrito. Roll up and enjoy!

    I love how quick these go together!! They are super yummy; everyone loves them. Best part is you get to choose what goes on them, but the bean spread is really yummy with the cumin and chili powder in there! Great choice!
