3Cans Great Northern White Beans
1Can Diced Tomatoes with Green Chili's
1 Medium Onion
4 Cloves Garlic Minced*See note
3tspCumin
2 tsp Oregano
8tsp Dried Cilantro*See Note
4TbspLime Juice
Instructions
Dice the onion, open, drain and rinse the beans, set aside. Place cooking pot on the stove pour about 1 tsp. cooking oil into the pan and warm. Once oil has warmed sauté the onions until translucent 4-5 mins.
Add garlic and cook until fragrant.
Add beans, water and Diced tomatoes with green chili's. Bring to a boil.
Add chicken bullion, cumin, oregano, cilantro, and lime juice.
Add chicken*, and let simmer for 20 mins.
Scoop into a bowl and enjoy!
Notes
I normally use canned chicken from Costco, about 2 cans. If you are using raw chicken please make sure chicken is cooked to 165 degrees before eating.
I usually buy the pre-minced garlic in water from the store.
I normally use dried cilantro. If you choose to use fresh its approximately 1/2 cup that you will want to use.
Oil measurement is approximate. I don't measure I just pour.
