White Chicken Chili
Have you ever looked at the back of a can, spotted a recipe, and thought, That sounds really good? Well, that’s exactly what happened here. I followed the directions just as they were written, but honestly, it didn’t taste all that amazing.
So I started tweaking — adding a little of this and a little of that — and suddenly, everything changed. What started as an average soup turned into something warm and comforting. Now it’s one of those soups I crave, and the broth is so flavorful I could honestly sip it straight from the bowl.
What you’ll need for this recipe:

Instructions
- Dice the onion, rinse and then drain the white beans.

- Place cooking pot on the stove and pour in oil and warm. Once the oil has warmed add the onion to the pot and cook until translucent about 4-5 mins. Add in garlic and cook until fragrant.
- Add the beans, diced tomatoes with green chili’s and water.
- Bring to a boil.
- Add the seasonings: bullion, cumin, oregano, cilantro, lime juice
- Add the chicken and simmer for 20 mins.
- Enjoy!

Notes
- I normally use canned chicken from Costco, about 2 cans. If you are using raw chicken please make sure chicken is cooked to 165 degrees before eating.
- I usually buy the pre-minced garlic in water from the store.
- I normally use dried cilantro. If you choose to use fresh its approximately 1/2 cup that you will want to use.
- Oil measurement is approximate. I don’t measure I just pour.
