Mandarin Orange Salad
This is one of my favorite salads. It comes together quickly with just a few simple ingredients. Normally I don’t mix everything into a big salad bowl. I have some picky eaters at my house. I have found if I leave everything separate, then they can build their own salad and eat what they like. Also, with salad I usually don’t use salad dressing. Feel free to use one you like, if desired.
I love to use the canned chicken from Costco (It seriously makes this meal come together so fast), but you can use rotisserie chicken, grilled chicken, baked chicken, etc. Use what works best for you. I’ve made this salad multiple ways.
My all time favorite lettuce is romaine, and it’s what I use 99% of the time. On occasion I do mix in spinach if I feel like it. Now I like to eat my salad with all the toppings. Tangy dried cranberries, sweet mandarin oranges, savory chicken, crunchy noodles, feta cheese, creamy avocados, green onions (If I have them), all topped on crunchy romaine lettuce. I love the flavor combination of all those items together but, I know its not for everyone.
What you need:
- Bowl for Chopped Salad (I love using my Salad Spinner)
- Mandarin Oranges
- Crunchy Style Noodles
- Romaine Lettuce
- Chicken

Let’s get started:
First thing we need to do, is wash and chop the lettuce. I usually just cut the lettuce and place the chopped lettuce in my salad spinner. and wash it really good, then spin it. repeating if necessary.

Once you have the lettuce chopped place a handful of lettuce on a plate or in a bowl. I love these big bowls for salad. They are a wide bowl. Maybe 1-1/2″ deep.

Now just layer your salad, with crunchy noodles, mandarin oranges, and chicken. and that’s it! quick and easy! Just a basic mandarin orange salad. If you want more topping ideas, see my additional topping list below.

Equipment
- Salad Spinner
Ingredients
- 1 Head Romaine Lettuce Chopped
- 1 15 oz Can Mandarin Oranges Drained
- 1 3 oz Can La Choy Asian-Style Crunchy Noodles
- 1 12.5 oz Can Chicken Drained
Instructions
- Wash and chop the lettuce, place in the salad spinner, and spin.
- Once lettuce is washed, place desired amount on a plate or in a bowl.
- Now layer with crunchy noodles, oranges, and chicken. Enjoy!
