Beef stew is one of those wonderfully warm, hearty meals that instantly brings comfort with every bite. It’s the kind of dish that begs to be enjoyed with a thick slice of crusty bread for dipping—or, even better, ladled into a warm bread bowl. Full of tender melt in your mouth chunks of beef simmered (or pressure-cooked) alongside carrots, potatoes, onions, and peas, all nestled in a rich sauce that’s both sweet and savory. It’s filling, satisfying, and perfect for chilly days when you want something cozy, homemade, and deeply comforting.

This beef stew can be made in the instant pot or in a crockpot. The following instructions are shown using an Instant Pot. If you choose to make this stew using a crock pot, follow the same directions, but cook on low for 6-8 hours.

What you’ll need for this recipe:

  • 8qt Instant Pot or 7qt Crock Pot
  • Beef Stew Chunks
  • Worcestershire Sauce
  • Soy Sauce: I used reduced sodium
  • Tomato Paste
  • Brown Sugar
  • Minced Garlic
  • Thyme
  • Rosemary
  • Beef Boullion
  • Water
  • Carrots
  • Potatoes
  • Onion
  • Peas

Instructions:

  1. In your Instant Pot (Or Crock Pot) Combine the Water, Worcestershire Sauce, Soy Sauce, Tomato Paste, Brown Sugar, Minced Garlic, Thyme (preferably ground), Rosemary (preferably ground), and Beef Bouillon. Mix until there are no clumps of tomato paste, set aside. (** you can always turn the instant pot on now to get it warming up, This will speed up the preheating time.)

  1. Wash and dice the potatoes (I used about 9 yellow potatoes.) Peel and dice the carrots (I used about 7 medium carrots), dice the onion and add the diced vegetables to the instant Pot (or the crock pot) with the sauce.
  1. Now add about 3 cups frozen peas to the the instant pot. Add in the stew meat.
  1. Give everything a good stir. close the instant pot and set the valve to seal. Use the following settings: Custom, High, 30mins, Start. (If using the crockpot set it it to low for 6-8 hours.)
  1. Once stew is finished scoop into a bowl, and serve with a side of bread.

Ingredients 

  • 2 lbs Beef Stew Meat
  • 6 Cups Diced Potatoes
  • 4 Cups Carrots
  • 3 Cups Peas
  • 1 Medium Onion
  • 2 Tbsp Worcestershire Sauce
  • 2 Tbsp Soy Sauce
  • 1 Can Tomato Paste
  • 1 Cup Brown Sugar
  • 5 tsp Beef Boullion
  • 4 Cups Water
  • 1 tsp Ground Thyme*
  • 1 tsp Grown Rosemary*
  • 2 tsp Minced Garlic*

Instructions

  1. In your Instant pot combine all ingredients for the sauce. Water, Worcestershire sauce, soy sauce, tomato paste, Garlic, Beef Bouillon, thyme, rosemary, and brown sugar. Mix tomato paste until no streaks remain. Set sauce aside.
  2. Now wash and dice the potatoes, carrots, and onion. Add into the instant pot with the sauce. Add in the peas.
  3. Add in the beef stew meat, and then give everything a good stir.
  4. Close the lid of your instant pot. Make sure the valve is set to seal. Turn on the instant pot. Use the Following Settings: Custom, High, 30 Mins.
  5. Once the stew is finished, move the valve to vent, in order to release the pressure. Open the lid and give it a good stir. Scoop into bowls, and enjoy!

Notes

*If not using Ground Thyme or Rosemary use 2 Tsp 
*I love garlic, I find I use a heaping teaspoon.
Beef Stew can be made in the crock pot. Follow the same Instructions for assembling the stew. then set your crock pot to Low for 6-8 hours. or on high for 4-6 hours. make sure beef is cooked all the way through before eating.
