This hearty hamburger soup is the kind of meal that warms you from the inside out. Packed with tender ground beef, vegetables, and a rich, savory broth… it’s simple, comforting, and absolutely perfect for a cozy dinner.

I’ll admit, I didn’t grow up eating hamburger soup. The first time I remember having something similar was shortly after I got married. Growing up, one of my favorite soups was Campbell’s Beef and Vegetable with Barley. Looking back, that’s probably the closest thing I had to hamburger soup.

When I first started making this recipe, I kept it pretty basic—just beef broth with a little salt and pepper. It was good, but over the years I began experimenting and adding a little more flavor here and there. One of my favorite changes was switching regular diced tomatoes for fire-roasted tomatoes. That simple swap adds a deeper, richer flavor that really makes the soup stand out.

If you only have regular diced tomatoes, don’t worry—they work just fine. But if you have fire-roasted tomatoes on hand, I highly recommend using them for that extra boost of flavor.

Now this soup has become one of those reliable, comforting meals that’s perfect for a busy night or a chilly day. So if you’re ready for a warm bowl of something hearty and satisfying, let’s get cooking!

What you’ll need for this recipe:

  • 5.75 qt Soup Pot: This is my favorite size for soup.
  • Hamburger
  • Onion
  • Garlic
  • Carrots
  • Celery
  • Tomatoes: I prefer the fire roasted tomatoes they add extra flavor.
  • Potatoes
  • Peas
  • Green Beans
  • Italian Seasoning
  • Worcestershire Sauce
  • Beef Broth: I usually use water and Beef Boullion
  • Bay Leaf

Recipe Tip

Pre-Cook Hamburger: I personally like to buy hamburger in bulk, if I can find it for a good price. Then I’ll cook it up and freeze it. Or I will bottle it. That way I always have some available as it makes meal prep much quicker.

Instructions

  1. Wash and dice the onions, carrots, celery, and potatoes. Set the vegetables aside. Open and drain the can of green beans. Open the tomatoes.
  1. Place your 5.75 qt pot on the stove. Place hamburger in the pot and cook (If not already using pre-cooked hamburger).
  1. Once the hamburger is cooked add in Onion and cook until translucent (about 4-5 mins). Once onion is cooked, add in the minced garlic and cook until fragrant.
  1. Add in the remaining vegetables, broth, and the italian seasoning, and the bay leaf.
  1. Bring the soup to a boil and let the vegetables cook until tender about (about 20 mins or longer).
  1. Stir in the Worcestershire Sauce. Taste and adjust seasonings if needed. Scoop into bowls and enjoy!

Ingredients 

  • 1 tsp Oil
  • 1 lb. Hamburger
  • 1 Medium Onion
  • 1 TBSP Minced Garlic
  • 4 Medium Carrots
  • 4 Stalks Celery
  • 3 Medium Potatoes
  • 1 Cup Peas
  • 1 14.5 oz Can Fire Roasted Tomatoes
  • 1 14.5 oz Can Green Beans
  • 5 Cups Beef Broth*
  • 1 TBSP Worcestershire Sauce
  • 1 Bay Leaf
  • 1 tsp Italian Seasoning

Instructions

  1. Wash and dice the vegetables: onions, carrots, celery, potatoes. Open and drain the green beans. Open the fire roasted tomatoes. Set vegetables aside.
  2. Place Pot on the stove and cook hamburger (if not using pre-cooked) and drain the fat. Add 1 tsp of oil to the pan and cook the onion until translucent (about 4-5 mins). Once onion has cooked, add in the minced garlic and cook until fragrant.
  3. Add in the remaining vegetables: tomatoes, peas, carrots, celery, potatoes, green beans.
  4. Add in the broth, Italian seasoning, and bay leaf. Stir and bring soup to a boil.
  5. Boil the soup until the vegetables are to your desired tenderness.
  6. Add in the worcestershire sauce. Stir the soup and scoop into bowls and enjoy!

Notes

  • I normally use water and beef boullion
