White Chicken Chili

Have you ever looked at the back of a can, spotted a recipe, and thought, That sounds really good? Well, that’s exactly what happened here. I followed the directions just as they were written, but honestly, it didn’t taste all that amazing.

So I started tweaking — adding a little of this and a little of that — and suddenly, everything changed. What started as an average soup turned into something warm and comforting. Now it’s one of those soups I crave, and the broth is so flavorful I could honestly sip it straight from the bowl.

What you’ll need for this recipe:

  • 5.75 qt Cooking Pot
  • Oil: Use your favorite cooking oil
  • Onions: I normally use yellow onions
  • Garlic
  • White Beans: I use the great northern beans.
  • Chicken: I like to use the canned chicken from Costco. Use what you like.
  • Tomatoes with Diced Green Chili’s
  • Cumin
  • Oregano
  • Cilantro: I normally use the dried. Fresh would also work great!
  • Lime Juice
  • Water
  • Chicken Bullion

Instructions

  1. Dice the onion, rinse and then drain the white beans.

  1. Place cooking pot on the stove and pour in oil and warm. Once the oil has warmed add the onion to the pot and cook until translucent about 4-5 mins. Add in garlic and cook until fragrant.
  2. Add the beans, diced tomatoes with green chili’s and water.
  3. Bring to a boil.
  4. Add the seasonings: bullion, cumin, oregano, cilantro, lime juice
  5. Add the chicken and simmer for 20 mins.
  6. Enjoy!

Soup pairs well with:

  • Corn Bread: Sounds crazy! but it is so tasty. I like to put the corn bread in the bottom of my bowl, then scoop the soup on top.
  • Tortilla Chips: This soup is also very delicious served with tortilla chips.

Ingredients 

  • 1 tsp Oil
  • 1 1/2 Pounds Chicken* See Note
  • 8 Cups Water
  • 8 tsp Chicken Bullion
  • 3 Cans Great Northern White Beans
  • 1 Can Diced Tomatoes with Green Chili's
  • 1 Medium Onion
  • 4 Cloves Garlic Minced* See note
  • 3 tsp Cumin
  • 2 tsp Oregano
  • 8 tsp Dried Cilantro* See Note
  • 4 Tbsp Lime Juice

Instructions

  1. Dice the onion, open, drain and rinse the beans, set aside. Place cooking pot on the stove pour about 1 tsp. cooking oil into the pan and warm. Once oil has warmed sauté the onions until translucent 4-5 mins.
  2. Add garlic and cook until fragrant.
  3. Add beans, water and Diced tomatoes with green chili's. Bring to a boil.
  4. Add chicken bullion, cumin, oregano, cilantro, and lime juice.
  5. Add chicken*, and let simmer for 20 mins.
  6. Scoop into a bowl and enjoy!

Notes

  • I normally use canned chicken from Costco, about 2 cans. If you are using raw chicken please make sure chicken is cooked to 165 degrees before eating. 
  • I usually buy the pre-minced garlic in water from the store. 
  • I normally use dried cilantro. If you choose to use fresh its approximately 1/2 cup that you will want to use. 
  • Oil measurement is approximate. I don’t measure I just pour.
