Who Doesn’t love a good Lasagna? In all its saucy glory, filled with meat, cheese, and noodles. I think the only bad thing about Lasagna is how long it takes to put it together. But in the end, it’s so worth it.

Well, if you are like me and lose track of time, soon realizing that dinner is fast approaching, and the kids are getting Hangry, and have no idea what to make for dinner. So you start frantically looking through your recipes for something that sounds yummy, and something the family will enjoy. Finally opening to the lasagna recipe, which in the moment sounds delicious and you come to realize you should have started cooking an 1hr or 2 earlier.

Well look no further and let the hangry bellies rejoice. Lasagna soup to the rescue. All you have to do is whip out your favorite soup pot. Gather your ingredients. And make a batch of some Delicious Lasagna soup, done and on the dinner table in about 30 minutes.

What you will Need:

  • 5.75 qt Cooking pot (This is my go to cooking pot)
  • 1lb. Italian Sausage (or hamburger)
  • Medium onion
  • Minced Garlic
  • Beef Broth
  • Tomato Sauce
  • Diced Fire Roasted Tomatoes (Plain Diced Tomatoes work well, however fire roasted has more flavor)
  • Italian Seasoning
  • Favorite Pasta Noodle ( Ideas: rotini, bow tie, penne, crushed lasagna noodles, etc.)
  • Worcestershire Sauce
  • Mozzarella Cheese for topping
  • Saltine Crackers for Serving (My family loves the Saltine Mini Crackers)

Let’s get started:

Start by cooking your Italian Sausage, while the sausage is cooking dice your onion. after the sausage has cooked drain the fat, and add in the onion cooking until the onion is translucent. once the onion is cooked add in the minced garlic, cooking until fragrant. next, add in the beef broth, tomato sauce, fire roasted tomatoes, and Italian seasoning. Heat until its boiling then add your favorite pasta noodle (see package for cooking time) Once pasta is cooked too desired firmness (al dente) add in the Worcestershire Sauce. Finally dish into your favorite bowls and top with your desired amount of Mozzarella Cheese. and serve with saltine crackers.

Equipment

  • 5.75 qt Cooking Pot

Ingredients 

  • 1 lb Italian Sausage*
  • 1 Medium Onion Diced
  • 1 Tbsp Minced Garlic
  • 4 Cups Beef Broth**
  • 2 (8 oz) Cans Tomato Sauce
  • 2 (14.5 oz) Cans Fire Roasted Tomatoes***
  • 1 tsp Italian Seasoning
  • 1-1/2 to 2 Cups Favorite Pasta Noodle
  • 1 tsp Worcestershire Sauce
  • Mozzarella Cheese For topping
  • Saltine Crackers on the side

Instructions

  1. Cook the sausage and drain the fat.
  2. Add in the diced onion and cook until translucent. Add in the minced garlic and cook until fragrant.
  3. Add beef broth, fire roasted tomatoes, tomato sauce, and Italian seasoning.
  4. bring soup to a boil.
  5. Add in your favorite pasta noodle and cook until desired firmness. (al dente)
  6. Add in Worcestershire sauce. (add more to taste if desired)
  7. Once soup is done, scoop into bowls and top with mozzarella cheese, serve with saltine crackers.

Notes

*Hamburger works well too
**I typically use water and beef bouillon
***Plain diced tomatoes work well
